� Granola Breakfast Tarts �Makes 4-5 small tarts
These Granola Breakfast Tarts are the perfect combination of crunchy granola crust and creamy yogurt filling. Great for breakfast, brunch, or a light snack, they’re simple, healthy, and customizable with your favorite fruits!
Ingredients:
Granola Crust:
1 ½ cups rolled oats �
½ cup shredded coconut �
2 tbsp chia seeds �
½ tsp cinnamon �
¼ cup + 1 tbsp coconut oil �
¼ cup honey or maple syrup �
Filling:
1 cup natural yogurt or coconut yogurt �
1 tbsp honey, stevia, or other sweetener (optional, if needed) �
1 tsp vanilla extract �
Instructions:
� Preheat the Oven:
Preheat your oven to 180°C (350°F).
� Make the Granola Crust:
In a large bowl, combine the oats, shredded coconut, chia seeds, and cinnamon. Set aside.
In a small saucepan, melt the coconut oil and honey over low heat.
Pour the melted oil and honey over the oat mixture and stir well to coat everything evenly.
Spoon the mixture into greased tart tins, pressing it firmly with the back of a spoon to form the crust.
Bake in the preheated oven for around 15 minutes, keeping an eye on them to prevent over-browning.
� Shape the Tarts:
Once baked, remove the tarts from the oven.
Working quickly, press the tarts down again with the back of a spoon to firm up the crust.
Let the tarts cool completely before removing them from the tins.
� Prepare the Filling:
In a small bowl, mix the yogurt, sweetener (if desired), and vanilla extract.
Adjust the sweetness to your liking.
� Assemble the Tarts:
Once the granola crusts are fully cooled, fill each tart with a generous spoonful of yogurt mixture.
Top with fresh fruits of your choice – berries, bananas, or tropical fruits like mango or kiwi work well! ���
