About AMI
Founded by friends Paul Perarnau and Willy Roulendes, AMI—meaning "friend" in French—is a Burgundy-based wine project dedicated to producing natural wines from organic and biodynamic vineyards. After meeting at Clos du Moulin aux Moines in Auxey-Duresses, Paul and Willy launched their first vintage together in 2014, driven by a shared philosophy: crafting fresh, balanced wines that convey pure joy to those who drink them.
AMI operates both as a domaine and négociant; they farm two hectares of their own vines in the Maranges valley and source organic grapes from friends across various villages in the Côte-d'Or. Working primarily with Pinot Noir, Aligoté, Gamay, and Chardonnay, they vinify exclusively with indigenous yeasts, without temperature control, fining, filtration, or additives—aside from minimal sulphur added just before bottling.
