High in the highlands of Jalisco, Agave Maximiliana grows wild as far as the eye can see. For 300 years the people of Jalisco’s Sierra Madre Occidental have been distilling Raicilla from these magnificent Agaves, at altitude, in traditional Copper Pot Alembic Stills. Today Estancilla produces Raicillas exactly the way their ancestors did and they tend the land around them in Jalisco’s highlands just as their ancestors before them. Cultivating agaves to peak maturity before harvesting them and preparing them for fermentation, they preserve and maintain the tradition of Raicilla in Mexico’s rocky highlands. .
These highland Raicillas are testament to the enduring spirit of the Jalisco's highland communities and the distilling history surrounding Mexico’s Tequila Capital. The origins of Tequila can be traced back to these traditional practices of Agave Spirit production, maintained by Estancia Raicilla. Books have been written on the topic of what makes a truly exceptional Agave spirits since the Agave boom, but Estancia is here to show that some things just don’t need to be changed.
Las Perlas and The Austin Spirit Society are pleased to welcome Estancia Raicilla to host an evening of tasting and conversation as we take a step back in time and get to know one of Mexico’s oldest spirits. Our local representative Glenn Boiles will be hosting with us to talk about Agave spirits in the past and how Agave spirits exist today.
