About The Chef
Chef Gian Paolo, born into a family of restaurateurs, has been deeply rooted in the world of hospitality since childhood. Raised just outside Palermo, Sicily, he moved to the U.S. at six years old and has since built a distinguished career in the restaurant industry.
Gian Paolo was pivotal in expanding his family's business, leading the opening of four restaurants in Downtown San Diego. At Il Fornaio, he managed operations across ten locations in California and Las Vegas, implementing systems that reduced costs and increased sales. His expertise continued to shine at Eataly, where he played a key role in the U.S. expansion, overseeing openings in Boston, Los Angeles, and Las Vegas.
As Director of Operations for L’Antica Pizzeria Da Michele, Gian Paolo developed corporate systems that enabled the successful launch of four new locations, helping the company grow from a startup to a thriving enterprise. He learned to cook from his grandmother in Sicily, and his favorite dish remains pasta con patate—a comforting blend of carbs on carbs.
