Inspired by his Greek roots, Provatina is about giving mutton and lamb the spotlight they deserve — bold, flavour-packed dishes that honour every cut, organ, and bone, made with care and creativity.
Marios trained in Michelin-starred kitchens across Europe — Amsterdam, Copenhagen, Geneva, and London — and now creates immersive dining pop-ups that mix food, storytelling, and atmosphere. You might know him from Archipelago & The Sea or his roaming restaurant Rho.
Now he’s bringing Greece to London with Provatina — modern, local, and sustainable, with a mission to make mutton sexy again.
