Learn and taste one of the seven major moles of Oaxaca: Mole Amarillo (Yellow Mole) with Chef Alfonso Martinez!
About this Event

In this class, students will learn about one of the seven major moles of Oaxaca, Mexico: Mole Amarillo (Yellow Mole).

Despite that Amarillo translates to "yellow," the sauce has a hue of orange due to the variety of chiles used in recipes today.

Originally made with chilcosle, or chiloxcle chile, it is an ancient chile that is only found within the state of Oaxaca.

Students will observe the making of this thin, silky sauce and taste it braised with chicken.

Guest Speaker: Chef Alfonso Martinez, Owner of Poncho's Tlayudas.


NOTE: This class will be taught in Spanish.
