In this starter workshop, Chef Leslie Edwards will introduce participants to the art of food preservation by discussing the benefits of fermenting foods, teaching the basic “rules” of fermentation, and demonstrating the step-by-step process on how to make sauerkraut.
After learning with Leslie and tasting the delicious ferments and pickles of The Wandering Locavore participants will make a ceramic fermentation weight in the AGB pottery studios to make sauerkraut at home

Discover the culinary art and science behind food preservation with our hands-on fermentation workshops. Local chefs will teach you how to transform everyday ingredients into nutrient-rich, probiotic-packed superfoods. Perfect for beginners and food enthusiasts alike, these workshops provide instructional demonstrations, tastings, and hands-on pottery sessions to provide you with all the tools to start fermenting at home. In each session you’ll learn about the culture, history, and alchemy of a new ferment and create a ceramic fermentation weight to ensure the success of your microbiomes at home.
The Fermentation Sessions are part of the AGB’s commitment to sustainable arts. Utilizing reclaimed clay and recycled glazes from our pottery studios, the program guarantees that nothing goes to waste in our studios and in your fridge.
About the Instructor: Leslie Edwards is the owner of The Wandering Locavore, a local, small batch preserving company. A self-proclaimed locavore, Leslie’s love affair with food started at an early age and ever since she has been obsessed with growing it, preserving it, and eating it! The Wandering Locavore is known for their unique selection of preserves, mustards, and condiments using local ingredients, creating #PreservesWithATwist. @wanderlocavore
