QA Level 2 Award in Food Safety in Catering .....delivered in the great outdoors!
The Level 2 Award in Food Safety in Catering delivered in the outdoors has been designed to address the food safety needs of the catering and hospitality sector but adding the additions of cooking in the open air!
The Level 2 Award in Food Safety in Catering course is delivered as per the syllabus. The addition to this training is that we all prepare and cook lunch in the outdoors together and look at the hazards associated with this practice.
As Forest School Leaders, Children’s workers, Scouts, Guides, voluntary helpers, food handlers, this training would be good for you as you have the responsibility to keep children, young people and adults safe. The qualification is designed to give an appreciation of good hygiene practice.
There is emphasis on the 4 Cs (chilling, cooking, cleaning, contamination). Monitoring controls, corrective actions and methods of reporting are examined as part of a food safety management system. It is aimed at those of you who perform a varied food handler’s role with some guidance and supervision.
The aim of the day is to combine the theory of food safety with the enjoyment of cooking lunch in the outdoors developing good practice guidelines in hopefully a fun, interactive manner. An ‘Outline of the programme’ will include:
- Importance of Food Safety in the woods incorporating HACCP
- Microbes – Where are they “lurking”?
- Illnesses linked to food and the outdoors
- Hygiene Control - Temperature control, Storage, Handling, Preparation, Cooking, Equipment ...
- Personal Hygiene
- Food Safety Control – planning a HACCP relevant to your practice.

- Food Preservation & Date Coding
- Hygiene Control – Prevention of Contamination, Purchase & Storage, Preparation & Cooking, Service & Waste
- Cleaning & Disinfection – washing up
- Hazard Analysis - Food Safety Control
- Personal Hygiene – Role of the Food Handler
- Layout & Design with Pest Control
- The Law - Food Legislation
Final session of the afternoon is a break for summary & revision, followed by the test/exam and the evaluation.
A cooked outdoor lunch is provided but candidates should feel free to bring a packed lunch & drinks.
A requirement from the awarding body is ‘Proof of Identity’. Each candidate should bring either a valid photocard driving licence, passport or photographic work ID card.
COVID - all attendees should take a lateral flow test before attending and please do not attend if you test positive or are showing any symptoms.
Chichester Forest Schools CIC are hosting the course location at their outdoor site. The 'Secret Garden' is next to: The Woolpack Inn, Fishbourne Road West, Fishbourne, Chichester, West Sussex, PO18 8DW (meet at pub car park).

The training is run by Sarah Blake who initially established this course with Lantra Awards, but now delivers this using the nationally recognised level two qualification. A multiple - choice test will conclude at the end of the course. After successful completion candidates will receive a certificate from Qualsafe and a ‘Blake Training’ certificate, personalising the additional outdoor food safety topics covered.
