MASAHIRO GOTO
Masahiro Goto is a legendary smoke-master hailing from the hills of Shirobetsu, Hokkaido, a small town in the Tokachi region on the footsteps of the Hidaka mountains. At the young age of 80, Goto San can be found roaming the local forests in early spring for freshly fallen cherry wood to harvest, dry for one year, and use in his variety of homemade products he makes for sale in local shops and serves at the local Ryokan he has run for over 60 years. His favorite thing to smoke is Turkey. An uncommon bird in Japan that made him regionally famous, especially during Christmas holidays. Mastery and serving are in his blood. So is creating flavor notes that brings folks from all corners of Japan to his 4 room hotel.

This man is a genius. His cherry wood smoked sauce is one of the most aromatic and delicious things I have ever tasted. Having personally visited him 4 times, everything he crafts comes with mastery wisdom, effort, and the energy of someone absolutely invested in perfecting every aspect of his multiple crafts. It is a tremendous honor & privilege to welcome Masahiro Goto to the United States for his first ever visit.

A special selection of grilled local (name of farm) chicken, Turkey, and whatever Goto San wants.
Butadon - a regional pork dish simmered in Shoyu and served on a bed of rice and peas, famous in the harsh winters of Obihiro, Hokkaido.
