This is an 'advanced' course offered to chefs that are confident in the kitchen with knife handling skills/chopping, basic cooking techniques, and open to mild heat and spices! Age range is open to these folks
This menu includes KFC, also known as Korean Fried Chicken, with a healthy twist! Our chefs will learn alternative cooking styles for dishes that are typically fried using cooking oils to achieve a delicious crunch. In addition, adding pickled toppings can significantly enhance the flavor profile of any dish, and our easy technique can create sensational flavors in just 30 minutes! Think of the possibilities!
The menu:
KFC: Organic Boneless Skinless Chicken Breast, Flour/Gluten Free Flour, Gojuchung, rice. *Can be made with tempeh or tofu for vegetarians.*
Grilled Cheese & Rice Cake Skewers: Prepared on kebab sticks with mildy spiced Gojuchung sauce and reduced fat cheese
Pickled Vegetables: Cucumber, Red Onion, Apple Cider Vinegar, Sweetener (maple syrup), Sesame Seeds
Sweet Treat: TBD
Before chefs start cooking in the kitchen, they will take a tour of the Nourish Flourish neighborhood urban garden, collect any fresh laid eggs available on that day, and learn about composting/local sustainable food systems.
A copy of everything chef's create will be sent home, along with any leftovers!
Parents are welcome to come have lunch with their chef between 2:00-2:30pm!
