This is a presentation to the Plaquemines Parish Historical Association at the Bell Chase American Legion Hall (104 Hunt Street), on Tuesday evening, Feb. 4, 2025, from 6:30pm to 8pm. Developed in an age before refrigeration, seafood drying is a traditional technique for preserving a food source that would otherwise spoil quickly. This is a presentation on the modern development of shrimp drying in the Gulf Coast region – from its introduction by Filipino fishermen in the early 1800s, to its commercialization by Chinese merchants from California in the late 1800s, to its mechanization by Louisiana innovators in the Twentieth-century, to the current struggle to compete with cheaper imported dried shrimp from Asia in the Twenty-first century.
