Kick off with a Kumamoto Oyster amuse bouche, followed by five courses of Cayman lobster bisque with truffle crème fraiche, citrus-cured salmon, ‘Brasserie Catch’ wahoo, beef tenderloin and a Baked Alaska with ‘Chateau Chooks’ meringue, Cayman sorrel sorbet and ‘Coco Bluff’ coconut cake.
