Learn how to make New Haven-style pizza using a wood or gas fired backyard pizza oven, while enjoying some wine and an Italian appetizer. Enjoy your own pizza masterpiece, then take home recipes for the dough, topping, and appetizer. Bring your apron and appetite. No backyard oven? No problem, Frank also covers how to convert your home oven into an impressive pizza oven.
In this workshop, you will dive into the art of making New Haven-style pizza, or as the locals say, ‘abeetza’. You'll explore the history behind this unique pizza style and learn everything from dough preparation to classic toppings. This class is held outdoors using gas and woodfired ovens. By the end of the class, you will have learned to make three iconic New Haven pies:
• The classic “Tomato pie” with its beautiful, rich tomato sauce
• The classic “ Tomato and Cheese” with its unique layering of mozzarella.
• The classic “Clam pie”. If you like seafood, this pie is to die for.

WHAT YOU'LL LEARN
- A brief history of New Haven-style pizza and what makes is unique.
- Dough preparation and fermentation; hydration
- Dough kneading, balling, and shaping
- Learn how to make Tomato pie, Tomato and Cheese, and Clam pie
- Learn how to bake your pizza in wood- or gas-fired pizza ovens.
- Tips and equipment needed to convert your home oven into one which will mimic a professional pizza oven
- You'll learn proper oven management and temperature control to achieve that signature charred crust and perfectly melted toppings.
- Baking the pizza – peel skills, placing, cooking, and extracting the pie
- Full recipes, oven tips, and resource list to help you master the New Haven Style pizza making

Our in person classes are not refundable however, one week prior to the event, you can give the tickets to someone else or reschedule (one time) for another date. No refunds, transfers, or rescheduling is allowed with 1 week of the class date.
