About Neon Greens: One of the first of its kind that, Neon Greens is a quick-service salad concept that delivers a farm-to-table experience with lettuce grown on-site in a 400-square foot vertical hydroponic farming facility connected to the restaurant. Owner Josh Smith actually refers to it as the “Willy Wonka” of salad restaurants because of the conveyor belt system that bring greens from the growing facility, over the heads of everyone in the restaurant, and into the kitchen where it is cut-to-order for each salad.
