Here, centuries-old Japanese traditions merge with modern influences.The name MIYU represents beauty (美 – MI) and gentleness (優 – YU) – values reflected in the artistic craftsmanship of sushi master Atsushi Hiraoka. The Tokyo-born culinary virtuoso has honed his extensive expertise over the past 30 years, working between Japan and Switzerland. Since May 2023, he has been enriching the culinary scene at the Dolder Grand as the head chef of Omakase restaurant Mikuriya, which has been awarded 16 GaultMillau points.
