Today we will be making Masala Khichadi (mix of lentils and rice with vegetables and spices), Saag Paneer (a delicious rich curry made with paneer and spinach (vegan alternative to paneer is tofu) and Cucumber Raita (vegan alternative to yoghurt is vegan plain yoghurt such as Alpro)
