We're welcoming Madre Masa back to LEB for their super popular Masa 101 class! Learn all about the millenary process involved in the making of traditional masa and tortillas, including local corn sourcing, the nixtamalization process (ancenstral steeping of corn with culinary lime), and basalt wet milling. In this class you'll also learn all about different masa shapes and then make your own tortilla, sope, empanada, and tostada paired with Louise Earl meats, and Madre Masa salsas, in this fun, interactive course. In addition to shaping, cooking, and eating your creations in class, each participant will also go home with a pack of Madre Masa tortillas. Bring your appetite!Beer, wine, and nonalcholic beverages will be available for purchase.
