Founder of Bartleby's Ice Cream Cakes Rachel Kamins will teach you how to make a variety of ice cream toppings with simple recipes you can use at home. Through demonstration and hands-on practice, learn how to make a tart cherry compote, crunchy candied nuts, and super-rich fudge sauce. Go home with recipes for all three toppings, plus a cup of Bartleby's ice cream!
Note: The cherry and nut recipes are vegan, while the fudge contains dairy. Please indicate whether you prefer dairy or vegan ice cream when registering.
About the instructor:
Rachel Kamins founded Bartleby's Ice Cream Cakes in Chicago in 2019. Bartleby's provides custom, gourmet ice cream cakes and treats made from scratch, offering dairy, vegan, and gluten-free options. Products are available to order through the website for pickup or delivery, with three pickup locations across the city, including Plant Chicago. Prior to founding Bartleby's, Rachel worked her way up from a Ben & Jerry's scoop shop to the corporate headquarters and also did a stint as a pastry baker at Zingerman's Bakehouse in Ann Arbor, MI. Both companies taught her to appreciate full flavor, premium ingredients, serious quality control, and care for the community.
