Two doughs, six shapes, four sauces, two fillings: in two days of hands-on cooking at Milk Street with Pasta Social Club founder Meryl Feinstein, you’ll learn enough pasta combinations to keep you well fed for life. Join Meryl and the Milk Street Cooking School team for a deep dive into the wide and delicious world of homemade pasta. On Day 1, we’ll make the most-used dough of southern Italy, whose quintessential pastas are shaped by hand—no special tools required. You’ll get plenty of practice forming orecchiette, the “little ear” shape that pasta grannies—and, with some practice, you too—can crank out at extraordinary speed. You’ll also play around with capunti, a peapod-shaped pasta perfectly designed to catch luxurious sauce. Plus, Meryl will demonstrate corzetti della valpolcevera, a lesser-known pasta shape from Genoa. You’ll get to mix-and-match your pastas with two of Meryl’s favorite sauces—citrus & pistachio pesto or roasted tomato & garlic sauce—and sit down to a communal dinner of pasta and family-style salad.
On Day 2, you’ll learn to make the egg dough required to roll sheets of pasta. You’ll get comfortable using common pasta rolling machines and will appreciate the historical and technical differences between this egg-enriched dough and Day One’s simpler water and flour dough. With your sheets of pasta rolled to perfection, you’ll transform them into scarpinocc (a shoe-shaped stuffed pasta) and cappelletti, “little hats” that look very much like tortellini but are much more forgiving than their famous cousins. It’s up to you how to fill each of these shapes, choosing between a roasted garlic & rosemary filling or a springy combination of asparagus, mint and ricotta. Plus, Meryl will demonstrate picture perfect caramelle, the candy-shaped pasta that graces the cover of her new book, “Pasta Every Day.” As our final trick of the two-day session, you’ll make a glossy, sage-infused butter sauce to toss your stuffed pasta in—that is, unless you prefer to serve them with a rich onion ragù. Enjoy a second meal together and ask Meryl your final pasta questions before departing to continue to make pasta confidently from your own kitchen.
As an added bonus, add a pasta machine from Meryl’s preferred brand, to your class ticket! You’ll go home with the very roller you use in class so you can start making great homemade pasta right away.
Note: In order to focus on making and working with pasta dough and practicing shaping, we will not be making the fillings and sauces (with the exception of the sage butter sauce) in class; the fillings and sauces will be made ahead for you to use and enjoy. All recipes will be provided to you after class to refer to at home.
Is this an in-person event?

Will I have to wear a mask during class?
We do not require masks during our in-person classes. If this policy changes, we will let you know. Please note: if at any time it is not safe to hold an in-person event, Milk Street reserves the right to cancel this class with any amount of notice. Consider making your travel plans accordingly. If we cancel an event, all attendees will be fully refunded. If you cannot attend this event as a result of COVID-19, however, you will not be refunded.

The entrance to our school is directly across from 49 India Street. Our entrance doors have two bowties on them.
Is my registration ticket refundable?
No. We do not offer refunds for in-person registrations. However, your ticket is fully transferable to another person for this event on these dates. You are responsible for finding someone to use your ticket, arranging reimbursement, and for sending us the new attendee's full name, contact information, and any special dietary requests.
Is a meal included?
Yes. In addition to snacks throughout class, you will sit down to a full meal at the end of each class.

Are children allowed?
Children 11-17 are allowed to participate if they attend and cook with an adult parent or guardian. The minor and the adult must each have a ticket to the class.
How many people does one ticket cover?
One ticket covers one attendee.
How early do I need to arrive?
You are welcome and encouraged to arrive up to 15 minutes before the event begins.
