The history of modern teppanyaki started in 1945 with the opening of Misono in Kobe, Japan, which commercialized the concept of cooking Western-influenced food on a large iron griddle in front of customers. The theatrical style, with chefs performing stunts and flame tricks, gained popularity among foreign tourists and eventually spread to the United States in the early 1960s, leading to the opening of the first teppanyaki restaurant in New York City. Today, teppanyaki is a worldwide phenomenon that is often combined with a buffet in casual dining establishments.
