We'll explore traditional Cabernet from Bordeaux, where it shines in classic blends, and compare it to the vibrant, fruit-forward styles of regions like California, Chile, and South Africa. You'll gain insight into the differences between Old World elegance and New World intensity, as well as Cabernet’s vital role in blended wines. Whether you're a fan of structured reds or powerful, fruit-forward wines, this class will deepen your appreciation for Cabernet Sauvignon in all its forms.
We always have bread, olives, and antipasto with class as we explore wine and food pairing fundamentals as well.
WHO SHOULD ATTEND This is a survey course for beginners and enthusiasts alike. It assumes some exposure to wine but little or no formal wine knowledge. This program is appropriate for both consumers and professionals in all wine, food, hospitality and service industries.
WHAT YOU WILL LEARN Students will learn technical wine tasting, the major Cabernet Sauvignon regions of the world, and the different blends and styles that make Cabernet so various and desireable. The emphasis is on providing an overview of Cabernet Sauvignon, plus some wine & food pairing concepts.

He began writing about wine, food and travel in 1988 and emerged as a wine expert through his syndicated wine column. He has contributed numerous articles to the Associated Press, Frequent Flyer Magazine, La Vie Claire, Beverage Business Magazine, Mobil Travel Guides, Fodor’s Travel Guides, Boston Globe, and many others.
