8x Iron Chef Thailand Champion, Chef Ped Phommavong is creating a special Omakase experience just for VLFWF! This dining experience will feature 16 amazing courses and two cocktails, curated just for the evening that will feature a blend of sushi bites, sashimi, and nigiri wth Japanese fish and seafood flown in directly from the Toyosu Fish Market in Tokyo on the same day to ensure peak freshness and quality. Guests will have the option of adding a flight of 5 sakés for $90 to go with their Omakase experience. Proceeds from this dinner benefit Joe DiMaggio Children’s Hospital.

We recommend all guests arrive 30 minutes before experience begins as guests that are late to arrive might miss parts of the experience.

South Florida’s premier hospitality group and the masterminds behind such hotspots as YOLO, TRP Taste, Rooftop @1WLO, S3, Boatyard, Java & Jam, and the newly opened Nubé Rooftop – has debuted several new shareable plates, sushi features and cocktails on the brunch, lunch and dinner menus at the oceanfront S3 restaurant.

Located beachfront on the ground level of the Hilton Fort Lauderdale Beach Resort S3 is where sun, surf and sand fuse with steak, seafood, and sushi. Welcoming those living locally or visiting as tourists, guests enjoy a rotating schedule of vibrant live music by local artists and DJS on the oceanfront firepit and outdoor lounge and indoor-outdoor bar. With an upscale, casual-chic vibe in a trendy, laid-back atmosphere, S3 is the ultimate locale in oceanfront dining and happy hours, an attribute that is mirrored in the newly created menus. Substantial, shareable plates fit the social scene. The Asian Coastal cuisine melds the freshest seafood sourced daily from Toyosu Fish Market with an impressive selection of steaks and main dishes.

Serving up sushi seaside, you’ll find Chef Ped Phommavong, Corporate Sushi Chef at S3, at the sushi bar.

“The art of sushi-making captivates me,” said Chef Phommavong. And in return, Chef Phommavong is captivating South Florida locals and tourists with every piece of hand-crafted, thoughtfully sourced and meticulously constructed piece of sushi at S3.

Chef Ped has an incredible talent for creating innovative sushi offerings, and a commitment to presenting the most fresh and authentic ingredients and flavors in every dish. He derives his flavor inspiration from his personal culinary journey – beginning with his family’s recipes that feature tastes of Thailand, and ‘rolling’ his way through an apprenticeship and ultimately, mastering the art of sushi making in Thailand. His ingenious approach to sushi making and creating truly experiential flavor profiles in every dish did not go unnoticed. Chef Phommavong won Iron Chef Thailand an impressive eight times and looks forward to bringing the same on-air energy and creativity to the sushi menu at S3.

“I am most passionate about creating exquisite, high-quality sushi dishes and constantly innovating in my culinary techniques. I take great pride in meticulously selecting the freshest ingredients to craft visually stunning and flavorful creations. Moreover, I am dedicated to pushing the boundaries of traditional sushi by experimenting with new flavors, presentations, and fusion elements, ensuring that my culinary repertoire continuously evolves and delights those who experience it,” said Chef Phommavong.

Once stateside, Chef Phommavong served as the Executive Chef for several premier, elite dining establishments – including the Okane restaurant in San Fransico, CA which was named in the 2023 Michelin Guide USA – before bringing his talents to S3 in South Florida. Chef Phommavong’s deep appreciation for the art of- and precision in- creating sushi comes to life in the latest menu offerings at S3. His shared commitment to innovation, quality, and gastronomy among the S3 culinary team, welcome guests to explore a journey of the senses with flavors from the East fused with Florida coastal and modern American ingenuities.
