This immersive class begins with a short, hands-on mochi-pounding session. Chef Okuya of Margotto Hawaii will guide you in creating a delicate shoyu-based broth, sharing techniques for beautifully arranging and cutting ingredients for a refined presentation. As you learn, you’ll savor a warm bowl of ozoni, freshly prepared by the chef.
No experience with Margotto Hawai‘i would be complete without indulging in a truffle mochi. Enjoy fresh mochi with a sprinkle of truffle, a drizzle of olive oil, and a touch of soy sauce. To finish on a sweet note, savor mochi served with a brown sugar syrup.
Margotto Hawai‘i is a branch of Margotto e Baciare, a restaurant featured in the Michelin Tokyo Guide. Margotto is a creative spelling of marugoto, meaning “the whole thing”, which is a nod to their unique way of serving truffles. The nuanced, umami notes of seasonal truffles are used to enhance Japanese flavors grounded in French technique. Margotto Hawai‘i was selected as one of 2024’s 10 Best Restaurants in Hawai‘i by USA Today and received a 2024 Award of Excellence by WineSpectator.
