Welcome to Istorya’s Chapter Four: Galeón. Travel back in time with us as we explore the foundations of Filipino cuisine in response to Spanish rule. Part One of this dinner chapter looks at the Spanish colonial period (1521–1800s), when food systems were imposed through the church, elite households, and galleon trade routes. This dinner isn’t about what Spain brought in—it’s about what Filipinos did with it.
Chefs Dio Buan, Justin Barnes, and Anjelique Rivas present a 10-course tasting menu shaped by our team’s research and travels. Each course highlights ingredients, techniques, and stories that show how Filipino cooks adapted, resisted, and transformed these influences.

Ticket Pricing
• Dinner only: $110 per person
• Dinner + mocktail pairings: $130 per person
• Dinner + cocktail pairings: $155 per person
