For four hours, you’ll learn from the master himself as he reveals the secrets behind the smoke. Whether you’re newer to the ‘cue or a seasoned backyard warrior prepared to up your game — come ready, and come hungry. And because the best barbecue starts on the farm, Anderson Farms will be the host and venue for this workshop where you’ll learn how his heritage breed hogs are raised, along with a menagerie of livestock. This intermediate course is a continuation of the beginners bbq class offered by Chef James. Topics will focus on teaching methods and recipes for smoking various vegetables, aging meats specifically for bbq, a more In depth lesson on trimming briskets, more in depth about how to wrap, why we wrap and when to wrap, reverse searing steaks with smoke, how to select and season the proper wood for bbq, how to smoke pork loin, cooking sausage, a few different slaws and his famous collard greens. Chef will continue lessons about respecting the rest period and how to confidently know when the meat is actually done coming off the pit. Plan to eat towards the end of this 4 hour workshop.
