A well-stocked pantry is transformative. The right vinegars, salsas, pickles and other condiments not only deliver big flavor and texture, they also save us mountains of time: A great meal is only ever as far away as the twist of a jar. Unfortunately, they can be hard to find and inconsistent in quality. So take a page from Milk Street’s book and learn to make your own. In this hands-on, in-person class in our Boston kitchen, you’ll learn six essential Milk Street pantry staples: frozen bouillon concentrate, preserved lemons, quick pickles two-ways, piri-piri oil and salsa macha.
First up: frozen bouillon—or sofrito—is one of our most essential pantry helpers. There are many varieties, and we’ll make our versatile miso-enriched recipe, a reduction of salted minced vegetables and aromatics that we freeze in cubes. One cube melted into canned tomatoes or stirred into water offers instant complexity to your next pasta sauce, soup or braise. Next, we’ll make preserved lemons. Their umami-enhanced citrus flavor are a must in Moroccan tagines, but we also use them to improve our vinaigrettes, roasted chicken and even shortbread cookies. You’ll make a jar to experiment with at home. Quicker to make and even more indispensable are pickled onions, the solution to many meals that beg for a final burst of crunch and acidity. You’ll learn two approaches in this class, a vinegar pickling method and a salt-curing process. Our refrigerators are never without one or the other. Fifth is piri piri oil; its signature woodsy herb-and-chili flavor profile works miracles on simple scrambled eggs, a platter of roasted vegetables or fried chicken. We’ll make this elegant, infused oil in class and try it a few different ways. Last, salsa macha is a reliable companion to pickled onions our refrigerators. This fried nut-spice-and-chili condiment instantly improves every simple taco, grilled fish platter or bowl of beans it meets. We’ll end class with a feast enhanced by the condiments we made in class, and you’ll go home with your own new homemade pantry staples, recipes that use them and the knowledge of how to make them your own.

Is this an in-person event?

The entrance to our school is directly across from 49 India Street. Our entrance doors have two bowties on them.

Is my registration ticket refundable?

No. We do not offer refunds for in-person registrations. However, your ticket is fully transferable to another person for this event on these dates. You are responsible for finding someone to use your ticket, arranging reimbursement, and for sending us the new attendee's full name, contact information, and any special dietary requests.

Is a meal included?

Yes. In addition to snacks throughout class, you will sit down to a full meal at the end of each class.

Are children allowed?

Children 11-17 are allowed to participate if they attend and cook with an adult parent or guardian. The minor and the adult must each have a ticket to the class.

How many people does one ticket cover?

One ticket covers one attendee.

How early do I need to arrive?

You are welcome and encouraged to arrive up to 15 minutes before the event begins.
