  • And for dessert, Torta Caprese

Description:
To write our most recent book, “Backroads Italy,” we traveled all over the country, from the southernmost tip of Sicily to the northern edges of the Veneto. In Amalfi, we learned to make pesto out of the last ingredient we would have imagined: lemons. In Sicily, we were taught to slow down to get better texture out of caponata. Cooks in Bologna taught us that there’s no better friend to bitter greens than rich pancetta and good olive oil. And in Rome, we were relieved to see how a splash of white wine can save thin, crispy chicken cutlets from overcooking. As we traveled, we were fed countless meals structured in the typical Italian way: with antipasti, primi, secondi, contorni and dolci. We learned that when you cook the way great Italian cooks do—with simple, seasonal ingredients, a practical mindset and smart techniques—you can make meals that check all five boxes at home without cooking all day long. This May, join us in-person at Milk Street for a hands-on cooking class that takes you on that same culinary learning journey.
As you cook, taste and discuss, you’ll learn everything we learned in Italy, plus every change that our recipe developers found necessary to make these recipes reliably work for U.S. home cooks. Over the course of 2.5 hours of cooking and eating with 13 fellow students, you’ll enjoy all five parts of the stereotypical multi-course Italian meal—plus some of our favorite Italian wines, of course.
About April: April Dodd is the Associate Director of Education at Milk Street, where she runs the livestream, in-person and private events programs. April began her culinary career at Middlebury College, where she ran a pop-up restaurant and a summer food preservation program. Since then, her culinary pursuits have included working in an organic bakery in France; developing recipes for a cupcake shop and founding a culinary skills training program in Nairobi, Kenya; working as a consultant to the UN Food and Agriculture Organization and a stint as the chef at a women-only retirement community in her hometown of Lexington, KY.If you don’t already have a copy of “Backroads Italy” you can add on a signed copy with your order for just $30 (vs. the retail price of $42).
