It’s Spring Break Season! Let’s get into an island state of mind and preserve some delicious tropical fruits! In this hands-on class, participants will use the water bath canning method to preserve mango salsa and tomato marmalade. Both recipes have been tested by food specialists at the National Center for Home Food Preservation.
Our mango salsa recipe complements grilled meats such as chicken, fish, shrimp, and pork tenderloin. It is also great for dipping tortilla chips and nachos, is wonderful on tacos, and can even be used as a salad topping.
Our tomato marmalade's sweet and tangy flavor profile is due to the combination of tomatoes, lemons, oranges, sugar, and exotic spices. This marmalade pairs well with grilled chicken or pork as a glaze. Spread it on a sandwich with fresh basil, tomatoes, and mozzarella. It’s also great on roasted vegetables! Try it for breakfast with a toasted English muffin or bagel with cream cheese!
