Fall Harvest Pies
Join Pastry Chef Katie Lewis for a hands-on pie-making class at HCCC’s Culinary Arts Institute in Jersey City. Create two timeless traditional pies: Classic Apple Pie and Pumpkin Pie.
Under Chef Lewis's expert guidance, you'll learn professional techniques for crafting flaky, buttery crusts from scratch, preparing flavorful fillings with fresh autumn ingredients, and achieving delicious bakes.
This 4-hour class is perfect for beginner to intermediate bakers looking to elevate your holiday dessert game. We'll cover dough rolling, spice blending, and troubleshooting tips, all while enjoying tastings. Leave with recipes, confidence, and pies ready for your autumn events!
Please bring containers to take home your pies!

- Seasonal Ingredients: Learn how to incorporate fresh fall produce like apples and cranberries into delicious pie fillings.
- Mastering Pie Crust: Discover the secrets to making the perfect pie crust - flaky, tender, and golden brown. We'll cover techniques for mixing, rolling, and shaping the dough to achieve professional-level results.
- Creative Decorative Techniques: Elevate your pies with decorative techniques like lattice tops, braids, and decorative cutouts. Learn how to add those finishing touches that make your creations truly stunning.
- Tips for Perfect Baking: Understand the science behind baking to ensure your pies come out of the oven with a beautiful, golden crust and a perfectly set filling every time.
Traditional Fall Pies
· Classic Apple Pie: A quintessential autumn staple featuring tart Granny Smith apples tossed with cinnamon, nutmeg, and a touch of brown sugar, encased in a double-crust pastry.
· Pumpkin Pie: The creamy heart of fall holidays, made with pure pumpkin puree, warm spices like ginger and cloves, and a silky custard base in a blind-baked crust. Learn to balance sweetness and create a velvety texture.

Culinary Class Schedule Changes:
- If the College Cancels a Course a full refund is issued.
- Non-attendance to a Class/Program does not constitute a withdrawal, nor entitle the participant to a refund.
- Please confirm work schedules before registering for classes. Refunds and credits will not be issued due to change of work schedule.
