The judges will be looking for the following general attributes or characteristics of an amazing chili:
• Taste – Above all else, this is the most important factor. The taste should consist of the combination of meat, peppers, spices, with the perfect blend of flavors and no particular ingredient being dominant as stated above.
• Texture and Consistency – Chili should have a good ratio of sauce to meat. It should not by dry, watery, grainy, lumpy or greasy.
• Aroma – Chili should smell good and give an indication of what’s in store when you taste it.
• Color – Chili should look appetizing. It should be a reddish-brown color over all or a verde (green chili should of course have a green color to it.
• Bite – The bite, or after taste, is the combination of heat and flavor from the selected ingredients that linger in the mouth after the chili has been eaten. Important note: Survival contest chili or chili that was created almost as a dare will lose valuable points as it is not pleasurable let alone make a meal out of. A good chili will deliver the flavor of heat without any pain or taste bud paralysis.
Chili will be judged based on what we personally believe any common random person would most likely thoroughly enjoy the experience of.
Look for cons:
• Too salty
• Not enough savor (salt) or bland
• Too runny or clean liquid/fat or water
• Too dry (not enough sauce)
• Too spicy (taste numbing or a choking hazard)
• Not enough flavor (overwhelming ingredient which over powers the whole experience)
Look for pros:
• Savory
• Perfect consistency
• Taste the flavor of the ingredients
• Texture
