- Cooling techniques and the best cuts for each application

About the teacher: Tim Craine has extensive culinary experience, including 6+ years as a manager at Ale House 1890 where he created menu items and was in charge of their meat program. He also is very involved in the menu design, planning, and execution of 250 Plates and has 25+ plus years in Center of the Plate Marketing with Gordon Food Service (now retired).
