About this Event
Love feeling earthy and natural? Having a mushroom focused dinner and pretending you’re in the forest? In this class, we’ll be introducing you to how “earthy” plays with cheese, and how to meet these sometimes polarizing flavors in the middle. While we won’t be foraging for all these mossy found flavors, we’ll be tasting them and talking about how food and wine gains those flavor profiles. We’ll dissect the difference between earthy in cheese and umami in bite, while exploring that an ugly cheese rind can lead to the most beautiful flavor in the world. Welcome to Tomme Town.
