About this Event
Brand new class!!! Join Michael & team for a hands-on, intimate, breakdown of a whole beef top sirloin. We will guide each student from start to finish on whole to completely butcher this 13-15lb hunk of meat! You'll break down the piece into Sirloin Cap(Picanha), Petit Sirloin, Center Cut Sirloin, Mouse Steak and more. We will you train how to separate, clean, portion and store the cuts as well. AND you'll take all the meat home to enjoy!
For veteran students, we've retooled our classes to make them more intimate, hands-on, and all around better.
What do I get with the class?

Public parking is available in front of the store, along Foothill and Yale Avenues, and behind the shop (on the right) in the alley between Foothill and 12th Streets.

Refund Policy If you can’t make it, please let us know 72 hours before class starts. Due to popular demand, class registrations are non-refundable, but you can always transfer your ticket to a future class or attendee. Any late cancellations (after 72 hours) get 50% of the registration fee in store credit.
