Part One: Spanish Colonial Influence (1521–1800s)
This chapter focuses on how religion, elite households, and galleon trade shaped cooking in the Philippines. Every dish highlights an ingredient, technique, or tradition that Filipinos adapted and made their own.
Since it's also National Hispanic Heritage Month, we'll be including Tamales on the menu, along with a special collaboration dish with the "Chocolate Queen of Cebu" Raquel Choa.
Each course is grounded in months of fieldwork and primary source research. By dining with us, you help keep these food stories alive.
