2022 Domaine Lavantureaux Petit Chablis $34.94
We are starting with some Petit Chablis, an AOP for the areas in Chablis that sit on a plateau and are more exposed to wind and cool temperatures. The Petit Chablis AOP is blanketed with more Portlandian limestone soil instead of the famed Kimmeridgian soil, which is younger and thinner. Domaine Lavantureaux was founded in 1978 by Roland Lavantureaux. Currently, he works alongside his two sons. This is fermented and aged in stainless steel producing that classic, austere, mineral chardonnay.
2020 Bardet & Fils Chablis Vieilles Vignes $31.94
Now we explore classic Chablis AOP, an area dedicated to Kimmeridgian soil, layers of limestone and clay from the Jurassic Period intermixed with fossilized oyster shells. Bardet & Fils is a second generation winery. This is their "Vieilles Vignes" bottling, which means old vines. The grapes come from vines over 40 years old.
2020 Jean et Sebastien Dauvissat 1er Cru Chablis Vaillons Vieilles Vignes $49.94
Vaillons is a highly regarded premier cru in Chablis on the left bank of the Serein River. The left bank vineyards sit on southeastern slopes, ideal for getting the first rays of sunshine in the morning. This "Vieilles Vignes" bottling is sourced from vines that are minimum 50 years old and an average of 70 years old. The estate has been owned by the Dauvissat family since 1899 and is now run by Jean and his son Sebastien.
2020 Louis Jadot Chablis Blanchot Grand Cru $104.94
Chablis Grand Cru is the most exalted area in Chablis, on the right bank of the Serein River. It is one continuous arc containing south and southwest facing vineyards, exposed to the afternoon sunlight. There are seven designations within Chablis Grand Cru, including Blanchot, the southernmost Grand Cru. Chablis Grand Cru AOP requires higher alcohol minimums, more restricted yields, and is routinely harvested by hand. Louis Jadot is one of the most known Burgundy producers and was founded in 1859. Their Blanchot is partly fermented in stainless steel and partly in "double barrels" of oak.
2022 Francine et Olivier Savary Bourgogne Epineuil $32.94
RED WINE? IN CHABLIS? Although Chablis is a white wine only appellation, there are areas just outside of Chablis dedicated to red wine production that can produce wine under Bourgogne AOP. This is coming from the village of Epineuil, one of the few villages allowed to append their name to Bourgogne. The grapes are sourced from right down the road from Chablis. Domaine Savary is a husband and wife team, both are two of the oldest wine making families in Chablis. This is a home-run pinot noir; approachable, juicy, delicious, and noteworthy.
2020 Benoit Cantin Irancy $32.94
Irancy is a village right outside of Chablis known for being a RED WINE ONLY appellation in a sea of white wine. Benoit Cantin is the 4th generation of the estate in Irancy and will pass it down to his son who is in the midst of graduating from Beaune wine school. This bottling of Irancy is mostly pinot noir with small traces of the obscure ancient grape césar.
