Hailing from the alpine region of Dauphine, the classical Dauphinoise potato is a celebration of country cooking, making the most of abundant ingredients, potatoes and milk. Learn the classical method and presentation with this recipe, using seasonal British vegetables and farm fresh milk.
To accompany Dauphinoise, perhaps the most classic of French casseroles, bourguignon. From arguably the most prominent red wine region of France this dish celebrates French wine and seasonal ingredients from the surrounding land, wild mushrooms & bacon. This recipe embraces the heritage of the original without needing hours in the oven, championing the finest cut of venison, the chump. Learn classical skills to develop a deep rich flavour with only a handful of ingredients.
Finish with the most classical of French desserts, Tarte Tatin. This recipe uses British pears with a classical tatin pastry, that is both flaky and crumbly. Learn to make this pastry by hand along with a classical crème Anglaise.
