  • Come and join us for a face to face, practical session.

This course has been designed to support non specialist teachers who are planning to teach food at KS3. It will give teachers the opportunity to look at the pedagogy of teaching food and cover the practical requirements which will help practical sessions run smoothly. Focusing on Basic Nutrition, Health and Safety, setting up demonstrations and tips on how to set up the practical classroom. The practical aspect of the day will consist of a hands-on approach, covering key practical skills required at KS3 and provide ready to use resources to take away.

Who is this course for?

This course has been designed to support non specialist teachers who are planning to teach food at KS3.

This course is designed for all non specialists who teach and support in food activities in school. This includes teachers, technicians, teaching assistants / higher level teaching assistants. trainee teachers, special needs support staff and cookery club leaders.

COURSE OUTLINE

Practical Session 1)

The session is intended to focus on:

• Knife skills

• Reduction sauce

• Food science: fermentation

• Practical skills: rubbing in, forming a dough, kneading, rising, shaping, baking

• Link to Food provenance, seasonality

• Links to Nutrition

• Methods of heat transfer


Practical Session 2)

• Sensory testing/ variety of methods


Practical Session 3)

The session is intended to focus on:

• Pastry

• Protein filling

• Skill progression within products

• Links to Food Science

• Links to Nutrition

• Links to Food Provenance

• Links to Food Safety

Fiona Mather

I have been a Teacher of Food & Head of Dept for 25 years and have been involved in many projects offered by the Food Teachers Centre over the years. I have experience in Primary and Secondary teacher training and have led on the Core SCITT course and would love to share my experience with teachers coming into this exciting profession. My aim is to support teachers and build their confidence in teaching practical food sessions.
