In this brand new class, Misty Meadows’ Garden Manager and Harvest Manager will explore the abundance our New England landscape has to offer us for food and flavor. We will discuss how to collect your own spices for a more sustainable approach to flavor that connects you to your land and your cuisine. We can achieve sour, spicy, umami, and salty; all with the plants and mushrooms you could find right in your backyard. We will also discuss a few preparations to aid you in your cooking journey- like infused vinegars, oils, salts, sugars, and more. Students will leave with some example recipes to try at home and will get an opportunity to taste test some favorites in class!
