Crudo — Persimmons dill citrus chives smoked trout roe Fresno pepper pickled shallots and ginger tea
Foie Gras Ice Cream — Grilled persimmons pomegranate and pistachios
Chawanmushi — Smoked bone dashi chives and Ossetra caviar
Chilean Sea Bass — English peas lemon butter sauce chive oil smoked trout roe and dill oil
Grilled Scallops — Shaved Guanciale pickled Fresnos grilled sweet corn and corn soup
Wagyu Filet — Whipped potato confit pearl onions crispy onion ember-charred broccolini and peppered demi
