Pack your appetite—no passport required. Our next Flight Plan dinner takes you to Florence and across the Tuscan countryside, one course at a time.
This five-course journey pairs iconic regional dishes with wines that bring them to life. From saltless Florentine bread traditions to Chianti’s summer gardens, Siena’s gamey ragùs, Arezzo’s hearth-roasted pork, and Lucca’s chestnut forests, every stop tells a story of place, history, and flavor. Wine pairings to be announced.
Seating Options
VIP: The Cheese Bar (14 seats; $175 each)The best seats in the house. Right at the bar, where you’ll have front-row access to wine pours, cheese stories, and the energy of the evening. Think of it as traveling in the cockpit—immersive, lively, and unforgettable.
Prime Floor: High-Top Tables (4 two-tops; $150)For couples or pairs who want a little more space while still soaking in the buzz of the room. These seats put you close to the action with just the right touch of intimacy.
Upstairs Private Tables (4 tables; $145)Tucked away on our second floor, these tables offer a cozier, more private setting while still enjoying the full Flight Plan menu and wine pairings. Perfect for small groups or guests who like a quieter Tuscan journey.
The Itinerary
Stop 1: Firenze – The Breadbasket of Tuscany
Cesto di Pane Toscano con Burro al Pecorino, Miele al Tartufo e Rosmarino
Trio of Tuscan butters: Pecorino Toscano, Truffle Honey, Rosemary & Olive Oil, served with focaccia & rustic breads
Stop 2: Chianti – Garden & Vineyard Country
Panzanella con Verdure Fresche e Stracciatella
Panzanella Crudo: Cucumber, fennel, radish, layered with heirloom tomato, roasted cherry tomatoes, crispy sourdough, stracciatella, micro basil & basil oil
Stop 3: Siena – Game & Handmade Pasta
Pappardelle al Ragù d’Anatra
Duck Ragu with Pappardelle: Hand-cut pappardelle ribbons tossed with slow-braised duck ragù, tomato, red wine, sage, and juniper; finished with shaved Pecorino Toscano & Pecorino al Tartufo
Stop 4: Arezzo – The Tuscan Hearth
Arista di Maiale
Herb-Crusted Pork Loin: Herb-crusted pork roasted with garlic, fennel seed, and rosemary, served with braised cavolo nero beans & Tuscan Kale
Stop 5: Lucca – The Chestnut Forests
Castagnaccio con Mascarpone e Gelato al Burro Nocciola
Chestnut flour cake with olive oil, rosemary, pine nuts, and orange zest, mascarpone & brown butter gelato
Each course paired with Tuscan wines (to be announced)
