Inspired by the hardworking Himalayan women in the fields and the rhythms of seasonal mountain life, this supper club aims to preserve and share the long-lost recipes passed down through generations.
Fresh, seasonal produce - journeying all the way from Himachal Pradesh - will be the soul of this immersive feast. At the heart of the menu are Kinnauri essentials - ingredients and techniques unique to the region, such as:
• Buckwheat (phaphra)
• Chilgoza pine nuts
• Wild seabuckthorn
• Fermented mustard greens
• Hand-ground spices from mountain villages
• Local rajma
