Our guest speaker, Tom Simpson, founder of Pearl Lake Distributors LLC, has been dedicated to bringing exceptional wines from small producers around the world to New England since 1999. Beyond wine, he enjoys hiking in the White Mountains and traveling with his wife, Rosalind. Join us for an evening of great wines and stories!
Amuse-Bouche: Raspberry Brie Phyllo
Delicate phyllo pastry filled with creamy Brie and raspberry, finished with a luscious blueberry balsamic reduction.
First Course: Italian Crab Cakes
A savory blend of crab, scallops, shrimp, and haddock sautéed with celery and onion, coated in artisan bread crumbs, and served atop fresh arugula. Finished with a buttery white wine sauce and drizzled with a zesty tomato basil aioli.

Second Course: Traeger Smoked Beef Flatbread
Tender, lightly smoked pulled beef smothered in house-made BBQ sauce, served on a toasted flatbread with chipotle chive crème and topped with crispy Applewood smoked bacon bits.

Third Course: Harvest Spinach Salad
Baby spinach tossed in a honey-ginger apple cider vinaigrette, topped with roasted butternut squash, mandarin oranges, sweet drop peppers, toasted garbanzo beans, and crumbled goat cheese.

Fourth Course: Stuffed Cider-Brined Pork Chop
Juicy cider-brined pork chop, seared with fresh herbs and glazed with Dijon mustard, stuffed with Gruyère cheese, caramelized apples, and onions. Finished with a rosemary cherry demi-glace and served with herb-roasted fingerling potatoes and sautéed haricots verts with shallots in extra virgin olive oil.

Fifth Course: Seasonal Fruit Crostata
A rustic Italian tart featuring a buttery, flaky crust filled with fresh seasonal fruit and a hint of warm spices.
