This demonstration wine dinner showcases a delightful menu perfectly paired with select Fess Parker wines, ideal for holiday entertaining. Each course is designed to highlight the unique characteristics of the wine while providing a delicious and memorable dining experience.

Menu
Appetizer
· Wine: Fess Parker SBC Chardonnay
· Tasting Notes: Shows notes of orchard fruit, hints of tropical fruit with a citrus mid-palate, soft round, hints of lemon chiffon and mineral notes.
· Dish: Mushroom & Onion Tart with Herbed Crème Fraîche
· Why it works: The tart's creamy and savory flavors harmonize with the Chardonnay's softness and fruitiness. The herbed crème fraîche and onion notes complement the wine's hints of lemon chiffon and mineral undertones.
First Course
· Wine: Fess Parker Sta. Rita Hills Pinot Noir
· Tasting Notes: Floral and earthy rose potpourri nose with wild strawberry and rhubarb, hints of talc and mint on the finish.
· Dish: Pasta with Arrabbiata
· Why it works: The bright, fruity notes of the Pinot Noir complement the slight spice and acidity of the arrabbiata sauce, while the earthiness of the wine stands up well to the richness of the pasta.
Second Course
· Wine: Fess Parker The Big Easy Red Blend
· Tasting Notes: Aromas of olive tapenade, smoky bacon, rich berry and black cherry fruit with hints of tobacco and spicy notes on the finish - big and easy to drink.
· Dish: Short Ribs over Grilled Polenta Cakes with Pan Sauce
· Why it works: The robust and flavorful short ribs are a perfect match for the bold, fruity, and smoky notes of the red blend. The richness of the meat and polenta is balanced by the wine's spiciness, according to Brown County Winery.
Dessert
· Wine: Fess Parker Santa Barbara Riesling
· Tasting Notes: While this is a slightly off-dry wine, Fess Parker Santa Barbara Riesling retains a bright, crisp acidity, and is perfectly matched to a wide array of foods. The aromatics and flavor profile are exotic and inviting, with notes of white flowers, Lychee nut, lemon rind, yellow peach, passion fruit and honeydew melon on the nose and mouth.
· Dish: Limoncello Glazed Warm Pound Cake with Winter Berry Crème Anglaise
· Why it works: The sweetness of the pound cake and crème anglaise is beautifully balanced by the Riesling's acidity and bright fruit flavors. The limoncello glaze and winter berries echo the citrus and fruit notes in the wine, creating a harmonious and delightful ending to the meal.
