The Fermentis team, in collaboration with Craft Components and United Peoples Brewery, is pleased to invite you to the 2024 edition of the Fermentis Academy. This half day session provides you the latest information and answer your questions about yeast, bacteria, and fermentation. Our aim is to help you as a brewer create the beer you want by understanding all there is to know about the fermentation world!

Adventure Into Lager: Exploring Diversity, Improving Efficiency & Quality: Interest in Lagers is surging in craft brewing segments. New styles are emerging, proving lagers are far from neutral. This session delves into lager production, exploring global diversity, technical differences (ABV, bitterness, colour, haze, etc.), and fermentation parameters. We will discuss how to optimize efficiency and quality, promote flavors, and understand yeast-hop interactions. A model predicting dry hop flavor development through biotransformation will be presented, along with yeast suitability for various lager styles.

Biotransformation: Where Hops & Yeast Meet: Introducing our innovative thiol-releasing yeast, a game-changer for brewers seeking to enhance and elevate the aromatic profile of their beers. The interaction between yeast and hops, better known as hop biotransformation, is the example. By selecting thiol-releasing yeast, breweries can unlock a new realm of possibilities in crafting unique and experimental brews. One of the key advantages of using our thiol-releasing yeast is its ability to enhance the beer’s aromatic qualities community.
