In some cultures, fermentation is a crucial measure of food safety, as the use of salts and the fermentation process ensures that the food is safe to consume. Not only is it a celebrated culinary and cultural practice, it also has incredible health benefits, including adding beneficial bacteria to our gut, preserving vitamins and minerals, and supporting an overall healthy digestive system.
