About this Event
Dive deep into chocolate in an immersive, hands-on cooking class featuring unique farm to table cacao and chocolate recipes. In this small group class, you will:
- Discover how chocolate is made from scratch in Encocoa's small batch chocolate studio.
- Learn about the storied chocolate plant with Hawaiian cacao growers, Pa'ani Farms.
- Taste single estate chocolate made from Pa'ani Farms cacao beans.
- Explore pairing cacao and chocolate in savory starters and sauces with the author of Savor Your Chocolate, Anne van Lynseele.
- Enjoy hands-on instruction on making a variety of unique sweet and savory recipes with singe origin chocolate and cacao nibs.
- Go home inspired by new flavor combinations and a deeper knowledge of this beloved food.
You’ll learn alongside other chocolate lovers in a fun, casual setting. Individuals, couples, friends, and family aged 18+ are all welcome.

Venue: Encocoa’s studio is a small batch chocolate factory and tasting room in Tacoma’s Brewery District. The studio is only open for special events and pop-ups. Please visit our online store for more info.
Parking: Parking is available along 23rd St and Pacific Avenue. Please do not park in the Cheers restaurant parking lot.
Attire: We recommend wearing clothes that you are comfortable rolling up your sleeves and cooking in. Please be sure to wear close-toed shoes.
Allergies: Encocoa’s commercial kitchen processes nuts, milk, wheat, sesame, soy, and eggs. Some recipes in the class will involve allergens.
About the Instructors:
Anne van Leynseele is a Farmer, Founder, Author, and Attorney based in Kona, HI and Edmunds, WA. Together with her mother, June, Anne cultivates cacao, coffee and other crops on their small farm, Pa’ani Farms, on the Big Island of Hawaii. Over the years they have rehabilitated and expanded a neglected cacao orchard to produce award winning cacao beans.
Anne’s book, Savor Your Chocolate, elevates the culinary and savory uses of cacao and offers springboard recipes for a variety of unique dishes. Through KonaCao, Anne works to encourage the use of unsweetened cacao and cocoa products in all cuisines, raise awareness of the global corporate abuses in cacao cultivation that use child slave labor, and push for global recognition of the rare qualities of Hawaiian grown cacao.
Dawn Meader McCausland is the Founder and Chocolate Maker at Encocoa, a craft chocolate studio in Tacoma WA. Dawn has spent many years studying and exploring the art and science of professional chocolate making. She founded Encocoa to offer creative, gourmet chocolate for snacking, drinking, dipping, and baking. Encocoa's chocolate is crafted in small batches to showcase the unique terroir of distinctive, ethically-traded cacao beans from around the world. With a background in community development and local food, Dawn is passionate about sharing the joy and wonder of craft chocolate.
