Transforming the Menu: How rediversifying and rebalancing what we eat can lead to a more sustainable, more secure food system
Bio:Michael Caines is a globally renowned chef and restaurateur whose distinctive modern cuisine celebrates the finest local and seasonal produce and ingredients from Devon and the South West while drawing on influences from his travels around the world. His work in the culinary world has been recognised over decades by multiple Michelin stars, and by awards such as the 2007 AA Chef's Chef of the Year and an MBE for services to the hospitality industry. An Exeter native, he was made freeman of the city of Exeter in 2015 “in recognition for his outstanding services in the field of cookery which has led to Exeter’s name being known around the world as one which supports cookery”, and more recently was named Deputy Lieutenant to the Lord Lieutenant of Devon. He features regularly on Saturday Kitchen and has appeared on other television programmes such as Master Chef, The Great British Menu and Sunday Brunch. In addition to managing his many restaurant businesses, he has generously given of his time and expertise over the years to initiatives such as the Exeter Festival of Food and Drink, and Exeter College’s Michael Caines Academy which is educating the next generation of transformative chefs and restauranteurs.
Abstract: In this talk, he will draw upon his vast experience to address some of the most pressing challenges in the food world today, from the loss of biodiversity in the natural environments upon which our food depends, to wastefulness in our food culture. He will suggest that such problems may be addressed by expanding our vision in multiple ways, from developing a better understanding of where our food comes from and of the foods that particular places (including Southwest England) are best placed to provide, to making the most of seasonal foods, to reincorporating neglected elements back into our cuisine.

Food Market: The lecture will be preceded by a Food Market featuring a dozen Devon food makers in the “Forum Street” area inside the Forum Building from 12:00 until just before the start of the lecture. Come early for the talk and enjoy some of the best food and drink Devon has to offer.
