Have you tried making a mirror glaze at home, but it never quite works out? Does the mousse cake melt while you’re pouring on the glaze? You don’t achieve the shine or the effect you were hoping for? It’s all in the temperatures & little details! Here’s your opportunity to learn the right processes as well as the tips and tricks to make a delicious, beautiful, shiny glazed entremet.
Keva will guide and demonstrate how to assemble an entremet and glaze it. You will be shown how to cut your sponge layers and then add chocolate mousse layers to make an entremet, then glaze and decorate it. All tools are supplied for class use, recipes and methods are given to take home and you will be provided with a box to transport your masterpiece home safely. This is a hands on class, as this is always the best way to learn! There will be a maximum of 4 attendees per class, so there's plenty of opportunity for one on one teaching.
This class will last 2-2.5 hours, during this time you will learn how to:
• Bake a sponge suitable for an entremet
• Cut your sponge into even layers
• Make a chocolate mousse from scratch
• Line tins and assemble your entremet
• Storage of entremet
• Make a mirror glaze
• Correctly mix and colour a glaze
• Glaze your entremet
• Decorate your entremet with Sucre Patisserie decorations
• Correctly store and package your completed entremet
All of the recipes and methods will be given to you to take home along with a decorated 6” round glazed entremet in a box, which you made during the class, valued at approximately $85.00.
Please note - small class of 4 students only, students must be 18 years. $265.00 per student (fee includes one person only), the full fee is payable upon booking to secure your place.

*** TERMS & CONDITIONS *** The class will only go ahead if all tickets are sold, in the case where they are not, the class will be cancelled and you will be given a refund. Refunds will not be given, if the participant cancels less than 30 days before the event. If you purchase a ticket and cannot attend the class last minute, you can send someone in your place, please make Sucre Patisserie aware of this change in advance.
