Join us for an introductory day of curing, smoking, and charcuterie-making with Steve Williams, founder of Good Game, one of the UK's most respected artisan charcuterie businesses. Steve, renowned for his pioneering approach to nitrate-free charcuterie, returns to River Cottage HQ where his journey began, now leading our curing and smoking courses.
This course is perfect for beginners and amateurs interested in making charcuterie and cured meats at home with minimal equipment. It’s ideal for smallholders with a couple of pigs or anyone with access to quality meat who wants to expand their skills in home curing.
Throughout the day, Steve will guide you through essential techniques and processes, focusing on salt-based curing and hot and cold smoking, particularly with key cuts of pork. You’ll learn to make cured sausages like salami and chorizo, as well as "whole muscle" charcuterie such as ham and bacon. Basic pork butchery skills are advantageous, and we recommend pairing this course with our Pig in a Day course, which can be taken either before or after.
By the end of the day, you’ll have the confidence and knowledge to start your charcuterie journey at home. You’ll also get to take home some bacon to finish curing.
Whether you’re a smallholder, a home cook, or simply curious about the art of charcuterie, this course offers a introduction to the craft.
