Learn how to make the stunning French classic dessert…a croquembouche!
Would like to learn how to make a show stopping croquembouche but don’t know where to start? Have you had problems making choux pastry in the past or have you attempted making a croquembouche but it’s collapsed? Patience is the key! Here’s your opportunity to learn the methods as well as the tips and tricks to assemble a beautiful croquembouche.
Keva will demonstrate from start to finish how to make a croquembouche, you will build your own profiterole tower and join in at other points of the class as this is always the best way to learn! There will be a maximum of 4 attendees per class, so there's plenty of opportunity for one on one teaching.
This class will last 4-5 hours, during this time you will learn how to:
• Make choux pastry (mix and bake)
• Make vanilla bean crème patissiere
• Fill profiteroles
• Make caramel
• Assemble croquembouche tower
• Decorate with caramel – spun sugar
• Trouble shoot
You will be given all of the recipes and methods, plus you will take home your own mini croquembouche in a box, which you will make during the class, valued at approximately $100.00. A light lunch will also be included during this class.

Please note - small class of 4 students only, students must be 18 years or older or accompanied by a adult who is also attending the class. $275.00 per student (fee includes one person only), the full fee is payable upon booking to secure your place. This class will only go ahead if all tickets are sold, in the case where they are not, you will be given a refund.
